  • Rhubarb.

While I was out on Saturday my OH decided to stew all the rhubarb that our neighbour gave to us.
It is now in the fridge and he realizes he cant eat it all.
Is there anything I can do with it other than throwing it out

    Freeze it.

I agree. Just put it into tubs and freeze it, then reheat it when you want to eat it. You can just microwave from frozen if you freeze it in microwaveable tubs.

I have mixed cooked rhubarb with jelly . It makes an interesting trifle! Goes particularly well with raspberry jelly. (Add it inplace of some of the water)

But, as the others say...it's easy to freeze in small portions.

Yep, just freeze. Nice with Greek yogurt and honey for breakfast. Or mix with whipped cream for rhubarb fool.

                    Freeze it
Make pies/crumbles (with added stewed apple if you have it)
Put the rhubab in a small ramekin with some rasberry puree, too with creme fraiche and brown sugar and grill until the sugar just catches

                    Throw it at people
