  • Recipes for French and Runner Beans

Has anyone got recipes for cooking French or Runner beans apart from boiling or stirfrying and if possible how make them interesting to get children to eat them.
it may be a struggle to reach the top, but once your over the hill your problems start.

I don't boil any of my veggies as I prefer them steamed but do use them in curries or with tomato quite a lot too.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

Garden Fish! Dip whole beans in a light batter and deep fry.
Cold bean salad. Thinly sliced beans, cooked and left to go cold. Drizzled with soy sauce and sprinkled with toasted sesame seeds.

Try oven-roasting the french beans with olive oil, salt, chilli, paprika or similar. Done right they crisp up nicely and make delicious finger food.

Boil the beans then put them in a pan with a chopped shallot and some bacon.Fry til cooked.
Boil them and add a sliced lettuce just before the end of cooking.
boil them and cool then add a tin of tuna, spring onion, parsley and vinaigrette.
Boil, cool and add to courgette ribbons and vinaigrette.
I cook them well as can't bear squeaky beans!!!

Noooooooo......... Squeaky is the only way to go, over cooked veggies always remind me of school dinners, just mush and no bite to them. When I first met OH he was a bit fussy about veggies but have since got him eating loads of varieties by showing him how much nicer they are lightly cooked with their nutrients and texture in place

I have just picked the last of my runner beans. They had got quite big and tough as OH didn't pick them while I was away and have just curried them
Heat oil in a pan add black mustard seeds and cumin. Add some chopped onion fry until just colouring add turmeric salt chillies and tomatoes. Fry for a minute or two , add finely sliced beans, and cover and cook till done add some garam masala and chopped coriander
              Serve and enjoy.

I like most veggies very lightly cooked, just not french beans!
