  • Bring Out Your Chilli Sauce Recipes

    Hello lovely Grapes.

    I'm after the definitive hot chilli sauce as I have about a kilo of fatalii to use up. Yes it is going to be a rocket fuel sauce

    After days of trawling through recipes online I'm fed up of finding a recipe I quite like, only to be told that the yield is 20 gallons and it needs storing in the fridge. Doh. No wonder American fridges are so big Should I just make one of these and then waterbath the results?

    I have tomatoes, chillies, vinegar, sugar, spices and don't want to buy anything else - did find a nice recipe that included papaya, nashi pears and mango

    So basically, do you have a fab recipe that you'd be prepared to share?

      The Nigella recipe is the one I've used for last few years and love it - I also make a thai version by adding some lemon grass, ginger root and kaffir limes leaves!

        Nope for Nigella - not buying peppers and my few are too precious!! I'll probably do something similar with apples as a base in the autumn.

        I'm more after a tabasco kind of dropping sauce rather than a jammy, jelly kind of thing, if you see what I mean!

          What about a sambal - Malaysian style chilli sauce. It's more a paste style that can be used in cooking as well as a sauce?

              I use the nigella one without the peppers. Just omit completely and don't worry about making the weight up. Worked fine for me - I also like to eat my peppers fresh
              You can also make a chilli "jelly" using the juice from boiled apple skins. Same method as a fruit jelly, measure juice to sugar, heat to set and add chopped chillies and a good glug of vinegar. It's surprisingly very good. I also do the same with the juice from grapes.

                #note to self - read the whole thread before posting!
                Though I do find the "dipping" sauces don't have much of a shelf lime. I've found a similar problem.
                But the nigella recipe doesn't set for me, so can be used as a dipping sauce. Try a small batch and taste it - it really is good.

                  Unfortunately I don't know of a pepper sauce recipe that will help you. I know the thread says jam, but it isn't http://www.growfruitandveg.co.uk/gra...jam_81893.html and might be some help. If you do the original recipe don't use fish sauce as it comes through too much and spoils it. I had a jar that lasted months with no issues.

                        I havent got any chillies through yet to make it, but I love the sauce normally and will be making it if my chillies ever make an appearance!!

                          I've never heard of sriracha sauce, before so that must be one to try.

                            my very basic, yet tasty recipe for a hot sauce:

                            12 habaneros (roughly chopped)
                            1 big carrot (roughly chopped)
                            1 onion (roughly chopped)
                            3 tbsp sugar
                            1.5 cups water
                            1 cup cider/red wine vinegar

                            Method:

                            Put all the above into a frying pan

                            Simmer until soft.

                            Blend and bottle up.

                            Done!

                              Quick question chilli grower, does it have to be habanero chillies for the recipe? They're really hot aren't they? So I'd need more if not using habaneros?
