  • Ideas needed

    I still have tons of blackberries in the freezer. I want to make jam or jelly but am looking for ideas of something to put with them . Already made blackberry and raspberry jam and don't fancy just using apples . Any ideas ?

    blackberry champagne? (more like beer) I know it's not jam but you still use a lot of sugar and it could be fun!

      Blackberry and pear jam. There's a recipe here if you're interested. I have never made it so I have no idea if it is any good.

        Keepitgreen.......Sounds interesting but it's produce for a craft fair so I was thinking some sort of flavourings ....like plum and cardamon jelly type thing ......

          I made a Spiced Blackberry jelly once! Can't remember the recipe but it made a pleasant change to a sweet jelly. More the sort of thing to have with cold meat and cheese.

            If you've got the time and patience, how about Blackberry and Orange?
            You'd need to boil up the oranges for ages (like for marmalade) and if you wanted the peel in the finished jam, there would be the prep for that (I'd sieve the rest and just use the liquid/goo, and if you don't want peel in it, just rough-chop the ornages and cook the whole lot together and sieve).
            Blackberries don't take so very long, but oranges need 2 hours (or half-hour in the pressure-cooker) to extract the pectin and flavour, about a pint of water to a pound of oranges. Lemons would work the same way.
            Flowers come in too many colours to see the world in black-and-white.

              hmmmmm a plan is being formulated........how about a spiced blackberry and orange jelly or sieved rather than through the jelly bag. Or ......a spiced blackberry and instead of adding some water using some elderberry cordial ?

                I think the spice was probably cinnamon, if that helps, maybe a star anise?

                  yup just had a goggle........cinnamon, star anise and cloves .. actually probably would go well with orange as well......

                    Forgot the cloves, but that sounds about right! Orange with it should be good, lighten it up a bit. Bramble jelly can be a bit "dense" sometimes I feel.
