  • Butternut Squash

    Having grown my first ever butternut squash and harvested it today in advance of the frost we are going to have tonight, I need some ideas of what to do with the thing. It's 52.8ozs. Ideas please gang

    Hands down for me roasted squash.

    Half it, and stuff it with other veg? Half roasted, half into soup?

      AP how the hell are you still growing them in Aberdeen in these current temperatures? Are you fibbing and really you live in Hawaii?!

        I had it in my polytunnel. The high low thermometer showed it had been below freezing and the foliage was blackened and flattened so i had no option but to harvest.

              I have a goody for you. Get hold of some lardons (bacon chunks) an onion and a cheese called Reblochon if you can, if not try some camembert or any good melty cheese.

              Bake your squash and scoop out the flesh. Fry the bacon and onion, season and add to the flesh. Put back in the shell (or in a dish) and top with the cheese. Lots of it. Then bake for 20 mins or so.

                Chunk up the squash and roast, or lightly fry until cooked and slightly crispy on the outside. Meanwhile, lightly fry a sliced onion in butter until transparent, add some risotto rice and cook. Add the squash chunks and some lumps of blue cheese (stilton or similar). Allow to melt in and eat. I also use the same combination but substituting pasta for risotto rice. Its also a useful way of using up excess oven roast squash.

                  I've got squash soup on the bubble at the mo: the usual onions, stock-of-your-choice, bit of garlic, cubed squash, diced carrots & a potato. A handful of butter beans chucked in too for protein. All home-grown*

                          Today we had Pumpkin Cannelloni and yesterday we had Squash Risotto.
                          Both were brilliant.

                          We have a wood oven and they are wonderful cut into slices and then put them in the oven at 200C with this over them.

                          INGREDIENTS:
                          1/2 squash
                          2 teaspoon coriander seeds
                          2 teaspoons oregano
                          1 teaspoon fennel seeds
                          1 teaspoon chilli powder
                          1 teaspoon salt
                          1 teaspoon pepper
                          2 cloves garlic, crushed

                            My daughter made this lovely salad over xmas. Roast the squash chunks and add some chestnuts towards the end of cooking time. Toss rocket in a dressing and serve on top of the squash and top with parma ham for meat eaters. Lovely.

                              Spicey soup;

                              fry off onions and garlic - add red chilli chopped up and let the onion go clear - cube BNS and add - add some stock, a couple of cubes, and a tin of coconut milk. Blend when squash is soft and squishy.
