Pruning my Stella Cherry

Hi Alys,
I missed pruning my Stella Cherry fan this February, which I believe I should have done. When can I prune next. I have fruit forming and lots of laterals going in all directions. Can I cut back to 5 leaves now or wait until after fruiting is finished

Please correct me if I'm wrong,but I was lead to believe cherry trees should only be pruned during the growing season. This gives the tree chance to heal which in turn prevents the tree contracting silverleaf.
