  • any ideas?

    I hurt my back a couple of weeks ago and havent managed out the house. today i made it to the greenhouse and, apart from finding everything half dead due to not being watered (AARRGGHH!!), i found this little lot....


    any ideas please?

        There's a pickled cucumber (or might be searched for as pickled courgette?) recipe on the Vine somewhere's about - I made some last year, very tasty!

          LOL! you lot make me laugh...not good with a sore back though! yes,,ideas s to what to do with them that doesnt involve large amounts of standing....so i found a recipe for hot cucumber soup which i just made and it is seriously yummy! unexpectedly so in fact.

          think i'll make some more of that for the freezer and then some sweet cuke pickles which are also nice.

          off to cut my way through the sea of courgettes next me thinks.......

          dont you just love husbands who tell you "dont worry doll i'm taking care of everything"?

          oh well, it'll soon be time for next years planting i suppose.....

            I picked 11 big uns last night, they were all hiding in the leaves on the bottom, so I'm in the same boat.....I'm getting sick of making sweet pickle....

              found a relish to try...

              Ingredients:

              * 2 lb (900 g) green tomatoes
              2 lb (900 g) cucumbers
              * 1 large onion
              * 1 large green pepper
              * 2 tablespoons salt
              * ½ teaspoon ground allspice
              * 1 tablespoon pickling spice
              * 1 teaspoon mustard seeds
              * 6 oz (175 g) white sugar
              * 1 pint (570 ml) white vinegar

              Method:

              1. Chop all the vegetables finely. Put in layers in a large bowl, sprinkling each layer with the salt. Leave to stand overnight.
              2. Tip into a colander and drain well.
              3. Put the vinegar, sugar and spices into a pan and stir to dissolve the sugar. Bring to the boil and add the vegetables.
              4. Simmer for about 30 minutes, stirring frequently, until the mixture is fairly stiff but still moist.
              5. Pack the relish into hot, clean, sterilized jars, right to the top.
              6. Cover and seal immediately.
              7. Label when fully cool.

              Makes 3 -4 lbs (1.4 kg – 1.8 kg) of Cucumber and Green Tomato Relish. Ready in about 4 weeks.

                Piccalilli? I have been using cucumbers, courgettes and beans in mine (not grown any caulis, alas), an ideal way to use up my gluts .

                Or Tzatziki:
                fry 1 teaspoon of cumin seeds with sliced garlic. Cool, mix with diced cucumber, and add to Greek yoghurt. Finely diced chilli & mint can be added if desired.
                I am going to make my first try at this tonight.

                Or use the raw cucumber as dipping sticks for humus etc.

                  I've had a cucumber glut this year so have been eating them raw in pretty much every meal and have given a load away. Have also done some sweet pickled cucumber from a NT recipe book (looking really good but not tried it yet ) and some cucumber jam from a Marguerite Patten book (really not convinced to be honest) and think I've about got them under control now, thankfully!

                  Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                  Which one are you and is it how you want to be?
