    Thought I'd have a bash at making redcurrent jelly. Was still bit runny on first attempt so my mum said I could re-boil it. Now I've got a gooey, treacle like jam. Did I boil too long the second time?

    Yes, did you use a themometer or wrinkle test?

      No thermometer and no, not sure what i'm looking for. Not done this sort of thing before. I suppose it's irriversible isn't it?

        It's all part of the learning curve.
        It is worth make notes, so you can adjust and fine tune your recipes.

        The wrinkle test is a very basic one you can do to see if the jam will set.

        Place a spoonful of the jam on a cold saucer in the fridge for a few minutes to cool. Run a finger through the jam: if the surface wrinkles, it's ready.
