I always add some demerera sugar to my beetroot and also, in some jars, some fresh, peeled ginger. The sugar, in the main, helps take the edge off the vinegar.

I use about 5 tbsp sugar for each jar, just heat the vinegar and sugar until the sugar is dissolved then pour over cooked beetroot - hope this helps

I wrap my beetroot in foil and bake them rather than boiling them, it really concentrates the beetroot flavour. Then I add sugar and some black peppercorns to the vinegar, I use red wine vinegar if I'm feeling flush otherwise white spirit vinegar.

Thanks for that Kitty, I had given up on B since Mrs P boils the colour (and taste) out of them. We will give that a try! What sort of time and setting please?

Sorry for hijacking thread But i am about to harvest some Golden Beetroot and was hoping to pickle them but somehow preserve their beautiful colour so the jars look a bit different. Can anyone please reccomend which type of vinegar would be best to use?
