    Any favourite celeriac recipes out there?

    Apparently I'll be getting one in my veggie box this week and I've never used it before. I don't think I like it much (had it once at the MIL's) but I used to say that about swede and winter squash, and since I've been getting them in the veggie box, I've been converted.

    Maybe the same thing will happen with celeriac...?

    Celeriac recipes

    My favourite is a shortcut version of céleri rémoulade. Peel your celeriac a shred it (grate it). Add a large dollop of salad cream, mix, serve as a starter. French school canteen classic!

    My second favourite is to add chunks of celeriac to bourguignon. This takes a long time to cook but doesn't need much attention, and it's delicious. Buy some braising beef. Brown a small onion in a large braising pot. Add the braising beef, some carrot, celeriac and potato chunks. Top with vegetable stock. Boil for 5 min. Add a bouquet garni or herbs of your choice, salt and pepper to taste. Put the lid on and leave to cook very gently for an hour.

    Yum!

                  I only use celeriac at Christmas, as it's one of the main ingredients to the beetroot soup [barszcz] I make as part of my traditional Polish Christmas Eve meal. It gives the soup a good bit of oompf.

                  I just bought a celeriac from a local small holder though as I thought it might be good for other soup receipes too.

                            Gratin

                            I had celeriac in a gratin recently, mixed with potatoes, it was lovely, so nice that I am going to buy some plug plants from Thompson and Morgan/Dobies this year just so I can grow some!

                            PS I misheard the chef who did the recipe and re-did the gratin with celery, that too, surprisingly was lovely.

                              Hi

                              I went to see a cookery demonstation by Hugh Fearnley-Whittingstall in Manchester about 15 months ago, and he did celeriac mash.

                              He diced the celeriac and boiled it in milk, at the same time as he was boiling the potatos in water. Then he mashed both the veg up together with milk & butter.

                              I was one of the lucky ones who got to taste it, and it was delicious!
