    Hi, i'm just making a batch of marmalade but on closer inspection the sevilles I bought have a lot of blemishes on them. Will they be ok to use?

    Shouldn't matter. If the idea of the blemished bits in the finished marmalade bothers you, tie them in a 'muslin' (or substitute) so they can be taken out just before you add the sugar. Squeeze the muslin to get out as much pectin and flavour as possible.
    Flowers come in too many colours to see the world in black-and-white.
