  • Cranberry recipes please

    Do you have any recipes you enjoy that I can try, especially luxury types with port, red onions, beetroot, orange, etc. I'll be using frozen cranberries.

    I want to make for Christmas and for gifts.

    If I had lots of frozen cranberries, I think I would use about 1lb cranberries, juice of an orange, boil as for jam (1lb sugar after cooking until the fruit is soft) and put it in small jars as a sauce to use with Christmas dinner (good with Turkey, Duck, or Goose). Never done it, but it ought to work well. If you want to make a larger quantity from the same amount of cranberries, and it would be better for Duck and Goose, use marmalade oranges, or a mixture of oranges and lemons (not just the juice, the whole thing), prepare and cook the citrus fruit as for marmalade (takes a long time, unless you use the pressure cooker) before adding cranberries and cooking a bit longer, add sugar last. Proportions probably 1lb cranberries to 1lb citrus fruit, and 2½lbs sugar.
    I tend to do experimental, an that isn't an experiment I've tried, but I reckon that should work quite nicely! (in fact if I can find some affordable cranberries I might do that any time now!!)
    Flowers come in too many colours to see the world in black-and-white.

      i'll have a look for you tonight after work....i have a few USA mags with loads of thanksgiving recipes in them at present.
