  • GYO Sausages

alright not GYO, but making your own... anyone do it?

I tried once and they were nice but a total fag trying to stuff the skins. I know you can get a machine, but don't know whether it's worth it. Might just be one of my idle thoughts that I should ignore. Would make a good bbq though!

    Any thoughts (or cheap jokes)?

I had a mincing machine with sausage stuffing facility. It was great but when I made my own I didn't put enough fatty bits in and the result was rather dry sossies. Using the sausage maker thingy was great fun - a bit like taking part in the Generation Game

I now have a Kenwood mixer and a mincer/sausage thingy on that but haven't had a go at making sossies again recently as we have a nice tame butcher who fulfills our sausage needs in return for bits for his Rover (same as Madmax's one) - fair swap - he gets car parts, I have a freezer full of local meat!

My sister in law makes them by wrapping them in aluminum foil and steaming.

So is Madmax driving just the chassis nowadays?

I can think of loads of cheap jokes but won't go down that route!

I've been 'stuffing my own' for a few years now and can thoroughly recommend it - you end up with exactly the snorker you want! It's also great to experiement. I make very large batches for myself (which I freeze) as well as for friends. I do all this with an attachment for my Kenwood bought on eBay some years ago.

Here's a great site to help with seasonings, recipe's and equipment: Weschenfelder Sausage Making - Weschenfelders Sausage Making

            Good luck with your mincing

Thanks Skotch - that looks helpful! I'll probably order something and give it a go.

I was particularly attracted to the Minnie-Plus Little Demon:

"...with its rapid re-load gear system it is by far the best, and by far the most beautifully engineered sausage stuffer on the British market. “It completely exceeded my expectations" said one happy customer.

                Still struggling there, HW?

I used to make sausages. I had the mincer attachment on the Kenwood Cheff, and there is a sausage filler which is an optional extra on that. If you can't be bothered doing 'proper' sausages, just make burgers instead. Same mixture, but no skins. Freeze well, but be a bit careful cooking them or they can go crumbly.....

Why not just make skinless sausages Rhona ?
