  • Marinated garlic

    In the deli round the corner they sell lovely garlic cloves in olive oil and chilli. Anyone know how to make this? Do you just marinate the garlic from raw or blanch it first?

    I could be completely wrong, but I'm sure I remember reading something about being v careful about storing garlic in oil - food poisoning or something... will go away and google!

      IF you google for botulism/garlic/marinating you will find a few bits of info about it - apparently you need to acidulate the garlic in vinegar for 24hrs first - the botulism bacteria can be in the soil and if I remember my food science classes from uni - it may be the one that is not destroyed by heat...hence blanching isn't sufficient to destroy it. but please don;t quote me on this!

        There is a recipe for it in this Months "Country Kitchen" and it tells you how the botulism occurs and how to combat it.

        There are stacks of pertinent recipes in it as it advocates seasonality so all the recipes are for food that is in season now.

              Now that the vine is happy to advertise different sites ...I think in then interest of food hygiene we should be able to reccommend these sites. If they then choose to advertise here...well brill.
              If anyone here can reccommed how I prevent botulism then I am all ears.....
              I now feel if google can advertise, then I suggest that if anyone can recommend a specific site which they have found helpful , then they could let us all know

                botulinum is very nasty, one of the worst clostridium botulinum is very very bad. do all you can to prevent it. vinegsr works well.

                  You could try roasting whole garlics with a bit of olive oil in the oven first - don't know if this would kill off the bugs - the flavour would be milder.

                    Garlic in oil

                    From the brief googling i have just done , i wouldn't personally attempt to preserve garlic in oil. so totally not recommended. ( I actually feel quite uncomfortable now about the jar i bought for a friend back from Madrid last year.)
