I have just found a site with some rather good looking wine recipes including one for carrot whiskey. www.thebrewshop.com click on country wines and recipes and then recipes for wine making.

Many thanks for all your suggestions! I read on another thread that someone had used frozen fruit instead of fresh. What does everyone think? dexterdog

hi dexter. there is no problem with frozen fruit as freezing generally breaks the fruit membranes which makes juice collection easier. As for blackberry whiskey I would avoid it as b/berries are more alike to a wine and whiskey is distilled from barley/wheat mash. If the two were to come together they might make a fruity whiskey. I suppose you could put the two together and end up with a sort of rum and black. But I would keep the two processes seperate

                    berry whisky

You could always brew the berries as a wine and then freeze distill the result. This would provide an excellent berry brandy which would be in the style of a french liqueure brandy but would only cost the sugar. My dictionary accepts that there are liqueure whiskies so they must be around. Perhaps you need a really old smooth whisky into which you put berries. It just seems such a waste of the whisky brewers talent.

                        Update

Happy bunny! Found some blackberries in Morrisons - so put them in a kilner jar together with a bottle of whiskey and some sugar. Have put it in a dark cupboard and will give it a shake every couple of weeks. Should be ready around Christmas! Yum yum! dexterdog

                          blackberry brew

I used blackberries last year to top up my grape harvest. I stored the blackberries in the freezer in bags as I collected them, then made a brew in Sept with my grapes. The blackberries impart an almost ribena like taste to the wine , they taste much stronger per volume than grapes. They could be bruised in a spirit and would make a great drink or you could brew with them. I am sure you will enjoy what you make.

                              Hey everyone,

I made blackberry whisky a few years ago, and still have a small amount left that I have saved as an extra special treat. I found a recipe for it in a Hugh Fearnley Whatsisname cookbook, but it was essentially as you had described Dexter. Absolutely delicious drink, and once I'd removed the blackberries prior to bottling, these went into the bottom of a trifle...yum!

Have just started some plum brandy last night as well - plums, sugar and brandy...that should be ready for Christmas too! Can't wait!

The trick with any of these liquer spirits is to use the cheapest spirit you can find - there's no point in flavouring expensive scotch/brandy/vodka/bin with berries as you'll drown the delicate flavour of the spirit. T*sco do a value brandy and whisky...£7-ish for a bottle
