grapefruit plea....

  • grapefruit plea....

    Please help me out here folks....

    We were sent a box of grapefruit and oranges from Israel at Xmas.
    The flavour is just SOOOO different!

    Anyway- the oranges are all gone , but we have a selection of green, pink and normal grapefruit, all of which I know will taste lovely, but we're not too good with the acidity of grapefruit ( esp as I'm also trying to serve rhubarb as often as possible before the '08 batch is ready to pick!!!)

    I don't really want to make marmalade, so does anyone have any recipies they can recommend ( other than half a grapefruit with a cherry on top)

    Seriously, have you thought about cutting them in half and serving them with a cherry on top? Ouch.!

    or freeze them for now, cut them in half later, make a sorbet out of the flesh and use the shells upside-downy for slug traps?

          Nicos. Only ONE chest freezer? Lightweight!
          OK. Plan B then..... and Shirl definitely to the rescue! Have you tried it yet Shirl, and is it nice?

            Nope but willdo as soon as I spot grapefruit on special offer. It supposedly makes a dry wine. And I expect it would have good 'citrus' flavour

              Could you please post it for us Shirl?

              Thought someone might come up with a 'Grapefruit surprise' recipie with Nil calories so one can add lashings and lashings of thick cream!!!!

                Grapefruit wine - CJJ Berry First Steps in Winemaking

                Oddly enough, this comes under recipes for January

                Ingredients:

                6 large grapefruit
                500ml (1pint) white grape concentrate
                1.3kilos (3lb) sugar
                4.5litres (1 gallon) water
                Yeast and nutrient
                1 Campden tablet

                Clean the fruit and grate the skins finely. Put the water, concentrate, gratings and juice into a bucket and add 1 campden tablet. Cover. 24 hours later add the yeast (and nutrient - this was missed from the instructions). Stand the bowl in a warm place (21C is ideal), covered closely, and leave for five or six days, stirring throughly twice daily. Strain off the liquor through a nylon sieve and dissolve the sugar in it. Put into fermenting jar, filling to shoulder, and fit an airlock. Leave to ferment out, and when this has happened rack into clean bottles and cork firmly.

                  I have recipies for grilled grapefruit, baked grapefruit, spiced grilled grapefruit and something called grapefruit ambrosia which involves coconut and honey....

                  All are very simple and fairly quick. We haven't tried them as TOH is allergic to most acidic fruit.
                  The weeks and the years are fine. It's the days I can't cope with!

                      OK,

                      Grilled Grapefruit.
                      2 grapefruit
                      30ml (2 level tbsp) soft brown sugar
                      30ml (2 tbsp) medium or sweet sherry

                      Method
                      Halve the grapefruit, cut the segments free from the skin and membrane and remove pips.
                      Sprinkle the halves with the brown sugar and sherry and grill until the sugar has melted.

                      Serves 4 first course portions.

                      Baked Grapefruit. As above but place on an oven proof tray and bake at 230 deg C (450 F) mark 8 for 20 mins.

                      Spiced grilled Grapefruit. As above but add a sprinkle of grated nutmeg.

                      Grapefruit Ambrosia

                      3 large Grapefruit
                      40g (1 1/2 oz) dessicated or fresh shredded coconut
                      60ml (4 tbsp) clear Honey

                      Method
                      Peel the grapefruit, removing all the pith, and cut the segments free from the flesh and membrane.
                      Place the segments in a large bowl with the coconut and the honey; stir the mix well.

                      Makes 4 dessert servings.
