  • The 12 December Whats Left in the Cupboard Bake!

    As we are off to sunnier climes (I hope! ha ha - just Glasgow) for a few days of pre-Christmas Christmas with family it was a bit of a ready steady cook here tonight. I gathered what was left and came up with this and it was rather delish - so thought I'd share it with you.

    (......... and apologies for any great chef, cook or grape who already has this in their name under another title)

    4 quite small potatoes
    1 onion
    100g fresh button mushrooms
    1/2 leek (no idea why there was only half left!)
    grated garlic
    chopped fresh parsley and a very tiny bit of oregano (from the tunnel)
    some bits of cheese
    1 packet of crips

    I peeled the potatoes and sliced them, then boiled for just 5 mins. I panfried the onion first till sort of brown, then added the mushrooms, leek and when all looking a good colour added the garlic, parsley and oregano. Plenty of seasoning - salt and pepper.
    I then made a runny cheesey bechamel sauce - 1/2 ounce butter, 1/2 ounce flour and 1/2 pint of milk (actually it was a 1/4 pint of milk and 1/4 pint of water!), but kept some cheese back for the topping.

    Assembling: In a dish, first the onions, leeks and mushrooms, topped with the sliced potatoes, pour over the sauce, top with a little grated cheese mixed with crushed crisps. Bake for 20 mins.
    We had it with lamb chops but it would be nice with lots of things or on its own with some crusty bread.

      Good on you Jennie....sounds just like my sort of meal!!!

      PS - what you bought for the dog this year???

        Oh forgot about the canine Christmas pressies last year, I haven't seen the tongue around for a bit. She's probably dug a hole in the field!

            Jenny,
            I love meals that come together like that in the kitchen.....
            and I'm sure you'll agree, that some of our very best meals have come from completely 'haphazard' and spontaneous "ooh, that'll go? sure it will..."

            Many a person, after a hard days' slog at home or work or both 'Does a Delia'.

            I think there are many, many of us Peeps here on this forum that do indeed open up the cupboard/fridge/freezer and 'Revert to a Rolf Harris' (i.e. "Can you guess what it is yet?")

            A truly GORGEOUS Rolf Girlie....

              I'll let you into a little secret Wellie - nobody listening at the moment ......... my cooking used to be sooooooooo bad I had to show the guys (OH and two sons) the picture in the cookery book to show them what it was supposed to look like. In fact nobody ever bought me a cookery book without pictures. (sad sigh)

              Huhhmmmm........ so (big cough) tonight was a major breakthrough, cooking something from nothing (so to speak).

                Oh Sweetheart you do yourself a terrible injustice! Just HOW do your men expect a superb cook like you to cope in the kitchen 'back on land' with wobbly sea legs....

                      I often did a similar thing when the children were small and shopping became intermittent due to one being off colour or the weather being vile. Our lad looked at it sceptically on day and asked what it was called. "Galimaufrey" I said - having heard the word and hoping it made sense! He was delighted to have a name for it and tucked in gleefully - even though it was different every time. When I later looked up the word, it means " A hodepodge made up from larder remnants" - so, perfect!

                            Our family name for 'back of the fridge stew' is 'Yantlet Relish' apparently due to the habit my Grandfather had of clearing the galley on his boat into a saucepan with no regard for sweet or savoury then topping the concoction with Panyan Pickle!
