  • Waste not recipes for leftovers and scraps!!

    Please share your recipes, hints and tips for using those food oddments that would end up in the compost or food waste bin - or the pets and chooks. Sorry Girls.

    I bung fridge gravel, leftover veg, plus a few lentils, into a saucepan of water, boil it all up well - add curry spices and tomato puree, and call it mulligatawny soup. Good hot in winter and cold in summer

        Very little gets wasted here. If any bread sits about it gets thrown in the food processor and the breadcrumbs are then frozen. I have always then got breadcrumbs to hand. Leftover gammon from the joint gets cubed and frozen either to go in omelette, quiche, pasta or ham and leek pie. The leftover roast pork from Christmas also got put in the processor with the stuffing and gravy. It will eventually come out and be topped with mash as the pork equivalent of a shepherd's pie (pigman's pie?). Leftover gravy is also frozen to be used when I make something like Cornish pasties. Leftover veg is either made into soup, or cubed, roast and frozen.
        The downside of all this is I have 3 freezers and a fridge freezer. Good thing is we aren't going to run out of food in a hurry unless we lose power.

          = Odds & s*ds, random leftovers, curly slice or 2 of ham, bits of pepper, onions or slightly less than fresh courgette or mushrooms found in the fridge! Can't just be me that finds this kind of thing in the fridge if you've had a busy week...

                I usually make either soups, curries or fritters with any leftovers.
                Meat gets minced and turned into rissoles based on a Delia Smiths recipe of meat, onions, herbs, pepper, an egg then either oats or breadcrumbs.
                Location....East Midlands.

                    I turn all my leftover veg into soup.
                    Add flavourings according to taste.
                    Usually curry powder, paprika, chilli powder or mixed herbs.
                    I also throw in a handful of flax seeds and pumpkin seeds.
                    Mashed potato is turned into potato cakes.

                      I try to buy only what I need, so batch cook at weekends and go out with a very detailed shopping list (after I have weighed allotment produce and know what I will be cooking)

                      Mince pies and jam tarts with leftover pastry

                      Leftover ham gets chopped up and added to pasta sauce or soup. Leftover meat/poultry go in pasta/curry/sweet and sour sauce. Any leftover veg go with them.

                      Allotment gluts get dried, bottled, pickled, chutnied, souped/sauced, frozen or given away.

                      Gone wrong sponge cake can be used in trifle

                      Only one big failure this year, had such a glut of apples we ran out of jars and could not give them away. Wrapping in newspaper in garage didn’t work as well as I hoped so ended up with 2 boxes of rotten apples going in compost.
                      The other thing I haven’t found a good use for is milk that’s gone sour and lumpy....

                          ^^^^ never really have enough to make cheese, often just the last inch in the bottle...
                          Scones look good though ;-)

                          While I’m here, don’t forget the Liverpudlian classic ‘scouse’ (or ‘blind scouse’ if you prefer veggie version or have no meat leftovers)

                            Not strictly leftovers: We often have potatoes, carrots and leeks mashed together and I do more than enough. Remainder (often about 500g) has an egg or 2 and about 120g of flour added with some pepper and is turned into potato cakes for dinner the next day.

                              You can freeze whole unpeeled apples - wash, freeze separate then can put together. Can’t eat raw once thawed but can use to cook.
