    We've managed to successfully grow 2 varieties of corn i our polytunnel this year - Blue Hopi 'flint' corn and red strawberry popcorn.

    The weather is now taking a turn, and the frosts will be with us soon. The cobs look relatively ripe (the kernels are turning blue/red and are a nice size) but they won't get to the papery husks stage if left on the plant before the frosts come.

    I'm guessing that if they're ripe enough they could be cut off and hung up to dry, but was wondering what other folks do to get nice dry kernels?

    Looking forward to having a go at nixtamalisation and making masa!
