  • Yellow onions - need ideas??

    I had a reasonable crop of yellow onions last summer but some were unharvestable due to rots already setting in. Now I am finding that a lot are rotting in storage despite a good drying and being kept in a dry shed.

    What can I do to use up some of these in a hurry? Especially as I hate to see waste anytime, but especially in things I've grown myself.

    I was thinking something like french onion soup or perhaps a spicy onion chutney (I know we got a lovely one in Sainsbury's a couple of years ago and I haven't found it since).

    Is there some way I can prepare the onions and freeze them (or put them in a kilner-type jar) to use later?

    Perhaps some kind of tart?

    Any and all ideas, with recipes if you have them, would be appreciated. Thanks in advance.

      Can I freeeze them raw without ny other prep apart from peeling and chopping? That would be great!!

        I do...then just use them for sauce/soup bases. They go a bit caramelised when you cook them off but it's better than losing the lot. I often have to do this when I clear a bed in spring/summer of onions that aren't going to keep or have a bit of rot as you mention.

          French onion soup every time. It tastes wonderful, is a powerful something-or-other against colds and it freezes brilliantly. Try it with Gruyere croutons, mmmmmm.

            Our cousin in India gets her maid to chop and fry onions for her in bulk which she then freezes in suitably-sized containers - as you can imagine, every Indian dish starts with fried onions, and getting that part done in advance apparently saves lots of time (especially if you've got a maid to do it for you, LOL!!!). I have frozen raw and cooked onions and I must say I prefer the cooked (though as I haven't got a maid myself, I can't always be bothered )

              Maybe so what I need to do is peel, and dice me onions, fry off some, and freeze all in ice-cube makers, then pop into a tub to take out small portions as needed? One of raw and one of cooked onions.

              And a large batch of onion soup for weekend warmth (definitely needed here this week!).

              Would that I could organise a maid for this (or even more freezer space- my new "larger" freezewr isn't actually as big as the old one!!).

                I have just been given the book What will I do with all those root vegetables by Elaine Borish, lots of recipes in there for onions. You might be able to borrow it from the library if you dont want to buy it.

                  Have just used my small leftover onions to make some relish

                  i chopped them finely in the food processor and put in a heavy pan with 1/2 pt vinegar and about 1/2 brown sugar with some black onion seeds and cumin seeds pummelled in a pestle (about 1 tsp) boil and then simmered slowly for about 1 hour till the sauce is thick and syrupy

                  It tastes great and i got 2 small jars
