  • What to do with big beetroots

Hope this is the right place to ask.
I sowed lots and have some still in the ground that are absolutely huge. Apparently they are not so good to eat when that big and get too hard. Is that right? Is there anything they would be suitable for like pickling or something?
Thanks, I don't want to dump them

They should be fine. How huge is huge? They will need to cook for longer than small ones, but get them lifted now.

Depends on the variety of beetroot, some don't really go woody when they're large.

Other than pickling, what about storing them to replant next year to save the seed from?

You won't have to buy beetroot seed for probably ever then heh

Don't think you lift and store and then replant Chris. Just leave in the ground to go to seed.

Thanks I took it for granted that they would be no good if left get this big. I'd say 5-6 inches across maybe and they are Boltardy. One of them is putting up a seed head at the moment, must keep an eye on it and collect the seeds.
            Thanks all

Look up Madhur Jaffrey's recipe for Shorvedar chukander (Beetroot with onions).

                Fabuloso ! Cheers, Tony.

You could always make a nice Beetroot Wine with a kilo or so.
