  • Using blighted tomatoes in chilli sauce?

    Hello
    I've just picked a load of tomatoes off plants affected by blight, so I expect some may develop blight if uneaten for long enough.
    Can I use them to make chilli sauce that will stay in the jar for at least three months?
    Will the sugar/vinegar still preserve them or will they develop blight in the jar?

    If the toms are fresh when cooked, the sauce will be fine. Boiling will kill off any pathogens.

      I've used them to make chutney which has been in a jar for at least a year. Vinegar and suigar preserved them
      Chilli is a preservative too. Sterilise your jars and seal as per normal, it'll be fine.
      Of course, if I read an obituary in a few months time I'll give different advice next year
