    Hi all you cook savvy peeps

    What is the reason that all the recipes for pickled red cabbage say to salt the cabbage overnight

    Hope you can explain

    Hi John. The reason for salting any vegetable you want to pickle is to draw out excess water so it doesn't dilute the vinegar.

    Just sprinkle the shredded cabbage with salt and cover with a plate. You'll be surprised how much liquid comes out. Obviously you rinse the salt off with clean water and dry the cabbage before adding your pickling liquid.

    Some people use a salad spinner to dry it, but I just pile it in a clean teatowel and shake it hard (in the garden)
