  • Pickled bored beans?

    Had a look on the WWW for recipes but just blagged it in the end.

    Shelled, then boiled the broadies,(some nasty stuff in uncooked beans) with skin on. (Strange, but I like the texture the skin gives, even though it is reccomended to remove them.) Packed into two jars and filled one up with Sarsons picling vinegar and one up with cider vinegar.
    Had a bit of a taste and think I prefer both the look and the taste of the cider covered beans.
    I always add vinegar to my broad beans on the plate anyway and carlings usually have vinegar added,as well as peas, so I'm hoping they will be a success.

      Not so sure about that TS even though I've seen them advocated as being safe to eat raw. Apparently a goodly proportion of people can have adverse reactions to them..................or so I was told or read somewhere.

        First article I came to.

        Are raw green beans poisonous?

        Its enough to sow the seeds of doubt in my mind (if you'll excuse the pun)

          I didn't get through your link Snadger, it was difficult to digest, excuse the pun.

          Kidney beans (and what they come from, French beans) contain a toxic lectin (phytohemagglutinin) that must be boiled out.

          Broad beans are a different family: "The broad bean ...seeds can be very toxic and can result in death if eaten. This toxic reaction only occurs to certain susceptible people who are unable to process certain chemicals in the plant.               If you like humous (homous?) then you can make something very similar with broad beans - very popular dish in Malta. It is nice!

                I've eaten that ^ a lot, it's lovely and a pretty bright green colour. I also eat nearly all my broadies raw in a salad ~ never had any ill effects, unlike with undercooked kidney (French) beans which have given me food poisoning

                  Shan't be pickling anymore. Even though they taste ok, the starch appears to have leeched out of them turning the vinegar cloudy!They don't look very appetising.
