  • New to chutney and jams, please share your tips

    Hi All

    I made a batch of beetroot chutney last week and found I had made a grave mistake - I didnt fill the jars to the top and I've been told it will now spoil

    So can you share your tips and must do's and DOnt do's please

    I am completely new so even the smallest silliest details, I will be grateful for!

    How far from the top of the jars? I've made jams and chutneys, and as long as the jars are sterilised and sealed properly I've found they keep OK.

      they were sterilised as were the lids.

      Where the jar starts to bend inwards for the lid?

        So about half an inch airspace? If so they should be fine. Also make sure you fill warm jars with warm jam/chutney. The air contracts as the contents cool and give you a really good seal. I usually fill to the bottom of the straight bit if you see what I mean.

          Sounds plenty full enough to me. With pickles and chutneys it's hard to go wrong really as the vinegar preserves so well. My last jar often tends to be part filled and I've never had one go off yet.

            Not warm, HOT. Never seal any jar unless it is very hot or quite cold. (you can probably get away with it when there is plenty of vinegar, but still best avoided).
            Flowers come in too many colours to see the world in black-and-white.

              I am embarking on my first lot of Cougette chutney, can I still use the metal tops for the jars?

                Are they lined or just metal like honey ones? So long as they've got the plastic (or whatever it is) skin on them like most have then they'll be fine.

                  Thanks for the quick response, they are the lined ones, from branston pickle! I've sterilised them and placed them in a hot oven to dry them out.

                  This time i've put chutney in to the top, so fingers crossed, I cant wait to open the first bottle already and hope it goes okay!

                    When it comes to chutneys I have really found that anything goes. If the jar is not full enough just dollop in a few spoonfulls of jam. I always dispose of half empty preserves into the new batch. Recycling in a way.
