  • How to preseve artichokes in oil?

    Hi

    I have some lovely globe artichokes in the allotment and would like to preserve them in oil but I am sure I read on this site that you run the risk of botulisim when preseving in oil - I cant find the thread now.

    Does anyone know if this is true? And if not or only a tiny risk then what is the best way to do it. I have made pickles and chutneys but this is a first for me so any advice greatly appreciated.

    Found this for you using Google http://honest-food.net/veggie-recipe...ed-artichokes/ As to safety, I've been googling for botulism/oil and it sounds a bit scary. Most recommend if you do preserve in oil then keep refrigerated and use within 3 weeks. Is it worth it?

        italians manage to do it all the time i love atrichokes like that, so um....
