  • Freezing maincrop potatoes

    Hi again all - there are a few threads around which suggest new potatoes freeze well if parboiled, but what about maincrops? I have just discovered (weyheyyyyy!!) that I have lots of lovely, baked spud sized, tatties which I need to preserve somehow (going on hol in two weeks and would like to know they're safely stored before I go!). Any suggestions anyone??

    Well done with the spuds, sue!

    Why don't you dig 'em up and leave to dry a bit then put in paper sacks (free from the greengrocer if you sweettalk them!)? You can then keep them in the garage/shed quite happily.

    You need a BIG freezer for spuds, BUT if you do want to do that, I've frozen potato (mashed with roasted garlic - heaven!) quite successfully.

      Thanks Hazel. I'm just a bit worried because the plants got blight and tho the tatties seem fine so far I'm not sure how long they'll store. But I guess I'll never know til I try, so paper sacks it is .... !

        Try the pet shop for bags, that's where I get mine from, nice big double-thickness ones used for bird seed etc.
        I've still got earlies to eat up but they still seem to be OK in storage, but have frozen some mashed.
        Make vat loads of vegetarian stews that I can then defrost and top with the mashed potato for a quick meal.
        Have also dried some, my dehydrator book recommends slicing them and dipping in acidulated water (lemon juice) or they go black. These would be good rehydrated and cooked with cheese and garlic.
        Have also read that you can make chips, part-cook and freeze for your own oven readies so might have a go at that especially as it means I can buy that lovely red chipping machine from Lakeland!
        Finally make lots of soup with them and freeze.

          Oohh, leek and potato soup is one of my favs, can't believe I didn't think of making and freezing that! And I like the chip idea as well, OH loves my oven baked chips so will try that as well, thanks Sue!
