  • freezing gooseberries?

    While at my local PYO I picked up a few boxes of gooseberries with the intention of turning them into jam. When I got home and started getting my equipment out, I realized I only have 2 jars left! I now plan on going out to get more jars this week, but can I top/tail the berries and put them in the freezer until I get the chance to make the jam?

    You certainly can. Just top and tail, freeze on trays and then pop them into a plastic tub or bag. Some people don't even bother to top and tail, just open freeze. When they are frozen if you give the bag/tub a good shake the tops and tails fall off.

      I always freeze mine, just on the last batch now, waiting for this years harvest next month.

        I just pop mine into freezer bags, make them into a flat layer rather than a clump, suck out the air (through a straw). seal , then pop in the freezer. Or put them in a rigid container and freeze. I've found they don't stick together like raspberries would.

          i freeze them by giving them a wash, but dont top and tail. i put 3 tbls. sugar in with them and after sealing, give the bag a shake to distribute the sugar.

            Thanks everybody. They're safe and sound in my freezer now, waiting for when I'm ready to make jam.

              i have a freezer drawer full of gooseberries from last year - i didn't bother topping and tailing or with sugar or anything - just filled up large freezer bags and margerine tubs and chucked them in the freezer - i'll be getting some out to make gooseberry jam tomorrow ......
