  • Flavours for fruit leathers

    OK so far I have made greengage with cinnamon sugar, blackberry and apple with vanilla sugar, raspberry and apple also with vanilla sugar. What juicy combinations have others made?

          Take four cups of fruit to one of water. Boil up and turning down heat, simmer until fruit softened. Add in your flavourings, sugar to taste. This is a finger dipping exercise I am afraid. I have used cinnamon, vanilla and mixed spice in mine so far - not altogether obviously. I use caster sugar that I keep vanilla pods in so all mine have vanilla sugar. You only need a bit and it really is a case of taste as some fruits are sweeter than others. I opt for mine a bit on the tart side rather than sugary sweet. Then push mixture through a medium gauge sieve and scrape off underside mesh. Spread this fruit purée onto greaseproof paper covered trays. Dry out on lowest oven setting - mine is S for about three hours. They need to feel firm but not brittle - dried but not so that you can't peel them from the paper. Break into pieces and dust with icing sugar. Easy way to get kids eating five a day. I keep mine in a clip lock box.

          PS Forgot to say you need to leave your oven door open. This does make your kitchen a tad on the warm side. Unless of course you have a dehydrator. I don't but at the same time as I did my last batch, I also dried all my chilli peppers and some tomatoes.

              I aim for about 2mm as I want them to dry fairly rapidly, otherwise cost becomes a major issue for making your own. These replace me having to buy those stupid fruit winders which I think are about £2 a box.
              Would look nice parceled up in cellophane for those Christmas hampers.

                  But don't leave them too long as I did with the last lot I did in the dehydrator otherwise you ruin it

                  Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                      I was also going to ask what fruit leathers were.
                      I have noticed VVG mention them a few times elsewhere on vine so I reckon she must be an expert

                            They are a really good way of using up a glut too. I have never managed to keep them longer than a few minutes - so I don't see them as a preservation method at all!
