  • An evening indoors.............

    Making my new favourite food.......courgette fritters. Also pickled my red cabbge so you can guess what I'm having for my bait tomorrow!

    What did you use to pickle the cabbage in ? I'm looking for something a bit different to do with mine .

      Big jar = clear malt vinegar with a bit of sugar added.
      Little jar = Brown malt vinegar with a bit of sugar added

      Just hope it aint too strong!

      Salted cabbage overnight and was surprised at the amount of liquid that came out of it!

          Veggies,cheese and eggs are good Atkins fayre aint they? The small amount of flour I used to bind the fritters shouldn't make too much difference!

          btw............the pickled cabbage is to die for, even after one days pickling.
