  • Cayenne Peppers

Grew from free seeds for the first time. Prospective son in law mad about hot stuff. I mean puts them on everything. So does anybody know how I can preserve them instead of buying Old El Paso brand Jalapenos? I'm guessing some sort of brine concoction.

    Hey you guys

So am I the only one growing these peppers? They are awesome and I need to preserve them. You are all way more knowledgable than me so please help.

I grew them, and froze them, Donna.
I have pickled some hotter ones, if you do a search, I think there's already a thread about it.
Basically I picked them, washed them, de-seeded and then sat them in first boiling water for 5 mins, then salted them overnight (to draw out the moisture) rinsed, then popped them into a sterilised jar with peppercorns and bayleaf (not obligatory). Filled it to the top with cider vinegar. Then I placed the jar in a bowl of boiling water for 10 mins to seal it.
      Hey presto!

If they are like chilli peppers then I just string them up in a cool place to dry. I'm still using mine from last year.

They are chillies. Dry them and string them. Add to dishes during cooking, or else rehydrate them in a cup of water

Or freeze them just as they are. Deseeding when you use them is easier after freezing and the flavour is not affected.

Thanks for the info everybody. I'm going to try both methods as in pickling and drying.
