  • Beetroot & orange chutney.

    I've pulled all mi beetroot up, so I thought I'd make some of this Beetroot & Orange Chutney.

    BEETROOT & ORANGE CHUTNEY

    Ingredients.

    2lb beetroot
    1 tablespoon salt
    1lb apples (I used some eaters I had left)
    3 or 4 small onions (I used red ones)
    1 pint vinegar
    1/2lb demerara sugar
    1/2 tspn ground ginger
    Juice & zest of 1 large orange

    Method

    1. Cook beetroot in salted water for 1 hour. When cold, peel and cube.
    2. Peel apples and onions and chop small.
    3. Simmer apples an onions with vinegar and sugar for 20 mins.
    4. Add ginger and orange juice, then add beetroot and simmer for a further 25 mins.

    It say's on the recipe to cool and seal but I like to jar mine while still hot...I find it makes for a better seal.

    Thanks for recipe, made some beetroot chutney a while back, was ok but needed a bit of a lift-This sounds just the thing. I Agree, I like to bottle mine while still hot as well, love hearing the lids pop as they cool and seal!
