    Thanks for the reminder of this thread - I made some last year and now have friends who want a repeat order! Also red onions are in my local s'market - on the plot they don't do too well.
    Whooops - now what are the dogs getting up to?

    Would think it should be OK, probably won't thicken as readily, but once it does, sugar content should be enough to preserve (as far as that is needed)....

    Honey burns very easily but you can substitute 10 - 15 % of the sugar content with honey and add it after the sugar has dissolved.

    Thanks re the sugar shortage, ended up just using less sugar - tastes great!

    Had to be very good and put it away before it got eaten!
