  • Rhubarb juice extraction

    I saw a good way of getting the juice out of rhubarb. Cut it into pieces about 25mm and freeze it in a plastic bag. After a couple of days, take it out of the freezer cut the corner off the bag and as it defrosts all the lovely clear juice will drain out.

    I've tried rhubarb vodka fistly steeping cut rhubarb but wasn't quite happy with the results so the next batch I used the juice from cooked rhubarb which gave it a little more flavour but I'm now leaving the rhubarb for the crumble.

      Covering chopped rhubarb with sugar not only extracts the juice but also sweetens it for those who find the flavour too tart.

      Personally I find raw rhubarb and unripe gooseberries a great allorment snack.
