    No not Engerlands 'football team', my first attempt at elderflower champagne

    I followed Hugh FW's recipe to the letter........until I decided it was too cloudy and filtered it death AND added a wine clearer. I am guessing that has been the boo boo.

    Is it possible to re ferment the practically non alcoholic but tasty (and very clear...) 'wine' to restore the fizz or even just macho up what I have if fizz is impossible?

    Sorry if this a daft question - I've never brewed anything before and I'm desperate not to repeat the same mistakes with the second batch which needs bottling tomorrow

    Please help!

    Ok, silence - were my crimes against brewing so terrible

    I've done as instructed with the second lot and it's most definately fizzing albeit very cloudy and 'full bodied' - full of greenfly bodies which I missed when picking over the flowers. Lets hope they sediment out.......

    I'm going to try restarting the flat stuff with a bit more yeast and sugar!

      Elderflower fizz will not be completely clear - partly due to refermenting in bottles which is what gives the fizz. I use the recipe from here and get good results every time.
