    Wines wot I have made

    Celery - revolting
Jerusalem Artichoke - ok, with predictable wind factor!
Pea pod - ok, earthy tasting
Orange & mango juice wine from carton - not as good as expected
black cherry from kit - not keen, tastes chemically

    redcurrant - really fruity, yum!
parsnip - delicious, like a chardonny
rhubarb - really delicious, like a rose

Grapefruit - don't know, maturing in the bottles
gooseberry & rhubarb - don't know, still clearing (taking forever!)
Apple wine - don't know, still fermenting

Make sure that you are using the same sort of ribena (concentrate) that CJJ uses - I'm willing to bet that the sugar content of ribena has been reduced over the years, which might play havoc with the batch ...

I'd check the SG when you add the yeast to make sure it's high enough, and add extra sugar if necessary

To be honest I've only made it the once and I think the bouquet was blown off with the fermentation process.
Next season I think I'll try adding a cupful of the flowers at the end of fermentation and let the alcohol extract the bouquet.

What kind of lychees did you use? I like the idea of this one. Tinned or fresh?
                              Thanks
