    20 heads of elderflowers, 1 bottle of gin, 4 tsp sugar and zest of a lemon,infuse for a week , strain ,bottle and drink.
    Anyone tried it? Or have an alternative recipe,at least there's no danger of explosion like there is with the champagne recipe
    don't be afraid to innovate and try new things

    I tried it - poured away this morning. The elderflowers floated in the gin and the top inch went a nasty brown. Proper hurt to pour all the gin away, but it was tainted.

    Am going to try again later in the week (if there are any flowers left!) and put the flowers in weighted muslin bags.

        You might want to pour hot water over the heads and leave for a couple of days, Strain and use the water rather than steeping the whole heads (only use enough water to cover the flowers and I Don't use the stalks). Elderflower is quite strong so IMO 20 heads would stick your tongue to the roof of your mouth.
