  • apple wine help

    I am just bottling the apple wine started off last august... and it's sightly fizzy!
    Does this mean I can't bottle it in normal bottles?
    Help... I've started it now

    Second problem with it is that although it tastes fine it is leaving a vinagary smell on my hands? But it doesn't taste at all vinagary.

      Is the fizziness just an indication that you have not de-gassed it yet?

        Mine went fizzy too. I had to take it out of the glass bottles and put it in plastic ones as the tops were doming

        Still tastes alright though.

          Could this be malo-lactic fermentation? Is the smell vinegary, or more like the acidy-bit of yoghurt?
          I had one batch of apple wine do a malo-lactic, it tastes nice, and only gets a BIT fizzy (but still a bit risky in glass bottles).
          Flowers come in too many colours to see the world in black-and-white.

            have been doing some research and it seems the vinagary smell on the fingers could be due to some wild bacteria on the fruit. This seems possible as the drink does not taste vinagary at all. OH saus it is only mildy fizzy, not madly like champagne when you pop the cork so we have bottled in. I am not going to store it in the house though. And I guess it won't last that long as it's almost ready I'd say. Time will tell if it goes BANG!
