  • Preserving & Pickling!

    Can anyone recommend a really good book about preserving and pickling!!

    Am anxiously awaiting my fruit and veggie 'gluts' and can't wait to fill all my empty jars for the winter months

    We have the River Cottage one written by Pam the Jam, dont know if its "really" good but it does for us.

      'Preserved' by Nick Sandler and Johnny Acton is really good for explaining the basics of lots of different types of preserving (incl things like drying and salting as well as pickling etc) and the reasons why certain things work.
      But for recipes, all my favourites are in old books, found on sites like Green Metropolis . Just put 'preserves' or 'pickles' or 'jams' in the search. Mary Norwak is usually a good bet, and anything W.I. is too.

        Thanks TEB and Sarzwix! I had looked at the river cottage book, amongst others, on the amazon site and will take a look at the sites you recommend Sarzwix. Am I the only one but sometimes the choice is so great I don't know where to start!!

          Just bought a brand new copy of Preserved by Nick sandler of Amazon for £9.74 with free postage!

          Looking forward to receiving it as apart from the normal preserving methods it includes information on smoking and salting!

            No, not just you, that's why I have what I grandly term a 'collection' of old recipe books - the OH calls it 'a pile of clutter'

              Couldn't decide which books to order so went for "Preserves: River Cottage Handbook No.2" and "The Basic Basics Jams, Preserves and Chutneys" by Marguerite Patten

              Your OH is very polite calling it 'pile of clutter'!!! My OH calls it 'pile of c@rp'!!!!!!!!!!!!

              Looking forward to the rain easing off for at least a few minutes to give my 'gluts' time to ripen!! Is it really going to rain all of August (again)

                  I have a Marguerite Patten book of 'jams, chutneys, preserves, vinegars and oils'. I picked it up years ago in a remaindered bookshop. Probably out of print now but if you can get it it's brilliant. It gives you proportions to use and each recipe comes with suggested variations. You can read it and soon feel able to make your own variations!

                    I really like the river cottage one and also using the WI Book of Preserves by Carol Tennant - lots of variety and large print too so I'n not having to put my specs on and off all the time! A real boon for me who can't see with them on and can't read without them on!!

                          OH has had a clearout of all his cookery books but he did find 500 recipes Jams, Pickles and Chutneys by Marguerite Patten, needles to say I kept that one . lol
