                  I wonder if'n I can make Delia's Truffle Torte but diabetic friendly? No idea what I could use to sub the liquid glucose though.

                    This doesn't have glucose in it, Jules. It's just a chocolate pastry case filled with a mixture of 85% chocolate, butter, cream and eggs.
                    It's an Anna Olsen recipe. Dead easy and ABSOLUTELY GORRRRRRGEOUSSSSSS!!!!!!

                      Sounds fab Creemteez......That recipe isn't on her website though? I've found chocolate cream pie but the filling doesn't look the same.

                      I could make up some low carb chocolate cookie dough for the base instead of pastry. Can you post the filling recipe & method on here, if it's not too much trouble, pleeeeeease?

                        No probs, here you go...The measures are in "cups" I'm afraid

                        For the chocolate pastry...

                        Oven Temp 180



                        1/2 cup softened unsalted butter
                        1/2 cup icing sugar
                        3 Egg yolks
                        1 cup plain flour
                        2 tblspns corn flour
                        1/2 cup cocoa powder
                        1/2 tsp salt

                        Blend the butter and the icing sugar.
                        Add the egg yolk and mix in.
                        Sift the dry ingredients and mix into the butter, sugar and egg mixture to form a very soft and sticky paste.
                        Turn onto a sheet of cling film, wrap and chill for a couple of hours.
                        When chilled and firm, roll out to line a nine inch fluted flan tin.
                        Prick with a fork and chill again for 20 mins or so (I put mine in the freezer for ten mins)
                        Bake empty case for about twenty minutes until the pastry loses it's shine and looks "dry".

                        For the filling...

                        8oz Dark (70%) Chocolate, chopped and melted.
                        1/2 cup cream
                        1/4 cup unsalted butter
                        1/4 cup sugar
                        1/2 cup hot strong coffee
                        2 whole eggs
                        1 tsp vanilla extract

                        Warm the butter and cream together until butter has melted.
                        Combine with the melted chocolate and the rest of the filling ingredients.
                        Mix well and pour into case.
                        Return to oven for just TWELVE MINUTES.
                        Allow to cool in the tin, then chill.
                        Decorate with whipped cream and drizzled milk chocolate.

                        Try not to eat all at once........
