Do you have any eggs, if so a Spanish omlette with a load of the veg would be fab.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

Stir fry veg with soft fruit after? Got any rice for veg risotto? Look in Seasons to Taste, use the Search Button, or pop over into the Nutterbox to see if anyone has any ideas. Bon appetite!

fussy 11 year old hates omelettes of any description! real pain when we have so many eggs! stir fry sound good though - think we have some noodles hanging around at the back of a cupboard somewhere!

or veg risotto also sounds good - though i like more than anyone else

        thanks

            Stuffed cabbage leaves?
How about chopping all those veg and mixing in with a cheese/tomato/white sauce - maybe mixing in a tin of tuna...and wrapping them in cabbage leaves?
            Maybe add chilli/curry flavouring?
            Serve with tatties

Roast potatoes and bung the courgettes in 1/3 of the way through

              Cabbage and onions, fried

Peas and beans, steamed with butter

Then some protein [meat or whatever you have veggie wise, depending on your tastes].

Combine the potatoes, cabbage and spring onions to make potato cakes or rostis and then make the broad beans into some broad bean hummus and serve with the peas and some courgette ribbons.

Have the berries with some belgian chocolate ice cream.

Have you got some Feta cheese? Fry onions, garlic and cubed tatoes until tender. Add a load of shredded cabbage or spinach or both. Salt and pepper and nutmeg. Let cool a bit then add a beaten egg and a packet of Feta cheese crumbled in. make some pastry or get hold of some Phyllo and make a pie. YUM!

This thread has given me a real hankering for onions lightly fried in butter then cheddar cheese added and fried until soft....

I don't need anything with it except fresh bread (preferably home-made white loaf with added wholemeal flour and seeds!!).

this is a fantastic thread - what a load of brilliant ideas - my mouth is watering just thinking about some of them!

i think we should have one like this every day - kind of like an online version of "Ready Steady Cook" - you know the one where they guest brings a bag of stuff and the celebrity chef has to make it into something yummy?

                      thanks everyone

I have a salad or a stir fry every night with the lotty produce: I don't like too much messing about with my food, sauces and the like. I stir fried some leftover boiled spuds last night, they were lovely.

For protein, peas & beans for me, meat for Himself (I buy, marinade & cook a big batch, then freeze in portions)

I put the same dressing on salads as on stir fries: one third wine vinegar, one third sunflower oil, one third olive oil, a dollop of Dijon or chilli sauce.

We shallow fried some as well!!

In fact I've started deliberately boiling a few too many just so we can do that the following day .
