  • Leaving meat in fridge over night?

    I'm doing some roast lamb for din dins tomorrow night and cannot remember if I have to cover the thawed meat or I can leave it uncovered?

    meat needs a bit of ventilation (ie, don't cover it with clingfilm, foil or greaseproof is fine, as long as it isn't sealed, or just leave it uncovered since it is only overnight) but make sure it can't drip onto anything else that is in there.
    Flowers come in too many colours to see the world in black-and-white.

      just make sure it's below any cooked meat, but theres no real reason why you can't leave it uncovered ... whichever you prefer really ... if it's already in a wrapper, just leave it and unwrap it before cooking

        if you leave it in the fridge uncovered for to long (24hrs +) it tends to dry out the meat so a covering of tin foil is quite adaquate.
        dont know if you knew this but its not the meat that goes off its the blood

          According to Hugh H-F, the outside of the meat drying out is a Good Thing as it helps to prevent the leaching of juices. If you go into a proper butchers, the meat isn't covered up in the fridge, they just lay a sheet of greaseproof type stuff over the whole lot at the end of the day.

            uncovered, although i tend to leave it overnight on draining board ro defrost and then slow cook in oven....
