  • Freezing eggs?

This time of year I have too many eggs, in winter too few. Has anyone managed to freeze raw eggs?

    Yup!
I freeze mine cracked open in bun trays, one per bun or two per muffin cup hole.
The silicone ones are much easier to get them out of to then put them together into one freezer bag.
The yolks always come out more solid but great for baking.

I have had mixed succes freezing cracked eggs before - I found the yolk went rubbery

However, if you lightly whisk/mix the egg I've found they stay great

Well, lightly smoosh them around a cup with a fork, lol. Just to mix it a little.
