    Hello,

    I have recently made some elderflower cordial. I used sliced limes, oranges and lemons in order to add flavour. It brewed for nearly 2 days. I was wondering if I could now use the peel to make candied peel?

    possibly, if the fruit is reasonably intact, make a syrup with 2lbs sugar and 1pt water pour over fruit and allow to cool, drain syrup and reboil adding 1lb sugar pour over and cool again, repeat until fruit is saturated with sugar, drain reserving syrup for other uses air dry fruit and store with coating of granulated sugar in an airtight container.
    Eat well, live well, drink moderately and be happy (hic!)

      Peel needs to be thoroughly cooked before candying. However you cook it, it is 'done' when you can cut a piece easily with something totally unsharp (eg the back edge of a table knife).
      Outside of that, the above recipe works well, you probably need to do about 4 or 5 'treatments' to make it work.
      Flowers come in too many colours to see the world in black-and-white.
