DD - is that 1lb jars - all from the quantities stated in the recipe? I have just picked 3lb of green toms, but don't have enough jars at that rate. May be you've used larger quantities??

                                Spanish Tomato Chutney

This is one my mum recommends, haven't made it myself but probably will do now I have picked all the toms. Sorry it's in old money

3lb green toms (skinned), 1 red pepper, 1lb onions, 2tbsps salt, 1 1/2 pints vinegar, 1tsp mixed spice, 1 tsp pepercorns, 1 tsp mustard seed, few chillis, 1 tsp cloves, 12 oz sugar.

1 Slice toms and red pepper and chop onion finely.
2 Sprinkle with salt and leave for several hours.
                                3 Drain well.
4 Put into a preserving pan with vinegar and spices tied in muslin.
5 simmer steadily for 10 mins.
6 Add the sugar and coninue simmering for 15-20 mins.
7 Pour into jars and seal down.

This is less soft than an ordinary chutney.

I suppose you could leave the spices loose in the pan if you wanted but they will be a bit crunchy.
                                Bright Blessings
