  • Simple chicken leek and carrot casserole

    I created this from a random selection of items.

    Wife got 6 chicken thighs, quite cheap.
    I had a leek from the garden.
    A 20x30 cm dish 5cm deep.

    Create a bed with the chopped leek and 2 carrots diced.
    3 chopped cloves of garlic.
    Lay thighs on top.
    A dash of olive oil on each thigh with salt and pepper.

    Into oven 180C 45 mins.

    Chicken lovely with crispy skin.

    Popped veg into a pan with some additional chicken stock plus a small handful of pearl barley.
    Top up with water a simmer for 50mins.

    The resulting soup is unbelievably tasty!

    That sounds lovely!
    I like these simple dishes.
    Bet the soup is wonderful with warm fresh crusty bread!

        Yes and the veg get all the chicken juices.
        The part I like is simplicity 4 ingredients thighs, a leek , carrots garlic.
        Still got to bowls of soup in the fridge.

          I tried it with a supermarket bought leek.
          It didn't have any of the green leaves.
          Soup was nice but nothing like it was with the green bits.
