Stuffing for a rather large round courgette

I forgot to check on my Courgette De Nice a Fruit Rond and instead of a sweet small round courgette I have a huge 8 inch diameter monster! It looks great so I thought it would be good to stuff.
What is your favourite stuffing mix for a courgette?
All weird and wonderful suggestions welcome!

Minced lamb with mint and a small amount of rice and whatever else you fancy chopped into it plus reduced chopped tomatoes. Topped with Greek yogurt.

Lincolnshire sausage meat taken from sausages bought from a real butcher. The supermarket ones contain an artificial sugar that leaves an unpleasant after taste.
I did pattypan squashes like this and they were very nice.

I like a mix of rice, mushrooms, onions, roasted toms and oregano with parmesan sprinkled on top.
