  • One million and one things to do with a black cherry?

Looks like we're in for a bumper black cherry crop this year it's a huuuge tree and it's covered in them! (Fingers crossed the birds keep away....)

Could do with some ideas what to do with some of them please
    - They are almost too sweet to jam.....any tips there?
    - happy to freeze some
    - OK with sterilising some in preserving jars.
-happy to freeze a few clafoutis
-happy to gobble them up fresh!
-just bought 3litres of Calvados (apple brandy) to make cherry brandy -funnily enough it goes down very well as a gift!

....and now my mind goes blank!
any successful recipes you can suggest?
oh...and why don't my cooked cherries have a similar concentrated flavour compared to bought jars of cherry pie filler-what on earth do they add to make the flavour so intense?...concentrated juice or something I'd rather not know about?

...any other suggestions?( will certainly give a lot away!)

1 year i did some beans in a jar of hot water,as in like preserves, heat jars in oven, put in prepared beans fill with boiling or near water, put on lid and it will pop,you could perhaps do same with cherries, providing everything is steril and the lid goes pop,you got it,cakes, scones, pies, crumbles, have you looked up how to glassay? some

      Moderators usually delete my suggestions!

Dowsing in Calvados sounds good, perhaps with some sugar.

Bottle them in sugar syrup, for use in pies, cobblers and crumbles later in the year?

So...tonight's offering is cherry clafoutis with ground almond and coco powder added.
The cherries aren't quite ripe but hey..I've used up 500g of cherries!

Just found this thread which tells you which flavours go with cherries..

              Cherries go well with...

I was wondering if balsamic vinegar might enhance the flavour like it does with strawberries?
              Anyone tried it?
