  • This year's pickled walnuts are vile! Advice please!

    Hi I just opened up my pickled onions and walnuts to test them and the onions are fine (pretty tasty if I say so myself) but the walnuts are.. Sour, and not in a good way. I did them exactly the same as last year except I think I accidentally skipped the air-drying bit after the brining - could this be the cause? I added a dollop of sugar to each jar and bunged them back in the twll after a good shake, do any of you marvellous experts know if this will work? Any other ideas welcomed!

      Ha sorry it's the cupboard under the stairs where all my many jars mature!

        Is it something to do with the nut oils & oxidation? Air drying must dry out the oils a bit?
