Water Bath Method of preserving - advice on jars

    Marmalade will store happily without any extra treatment due to the sugar content. However, I grow extra tomatoes to store the surplus. I don't want to buy another freezer so I make pasatta and store in pasteurised jars, water bath would also work but you need a decent seal and good glass to take the pressure. The IKEA jars don't seal very well and certainly don't take a vacuum. If I just stored in the fridge a) I'd need another fridge and b) gave a very big risk of botulism as there is no preservative (like the sugar in your marmalade that you're only storing short term anyway) in my jars which I store for up to a year.

    Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.
